Pyongyang naengmyeon, originated in Pyeongyang, now in North Korea, is a major branch of the Korean cold noodle family. Consisting of noodles made of buckwheat flour in cold soup, a mixture of beef broth and dongchimi (a kind of kimchi which does not contain red pepper powder), topped with one or two thin slices of boiled meat, the dish looks simple and honest, but enjoys a loyal popularity among those who prefer Pyongyang naengmyeon to any other kinds of cold noodles. Restaurants specializing in authentic Pyongyang naengmyeon are usually old and expensive and not as common as other cold noodle restaurants.
